Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 8 oz semi-sweet chocolate, chopped
  • 2 tbsp unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Whipped cream (for garnish)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
  2. Sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter with the sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternately add the dry mixture and the buttermilk, mixing until just combined.
  6. Pour the batter into the pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool completely in the pan.
  8. In a heatproof bowl, melt the chopped chocolate and butter over simmering water, stirring until smooth; set aside to cool slightly.
  9. Beat the egg whites until soft peaks form, gradually adding 1/4 cup sugar until stiff peaks are achieved.
  10. Mix the egg yolks into the cooled chocolate mixture, then gently fold in the whipped egg whites until no streaks remain.
  11. In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form, then fold it into the chocolate mixture to complete your mousse.
  12. Carefully slice the cooled cake horizontally into two layers.
  13. Spread half of the mousse evenly over the bottom layer and top with the second layer.
  14. Spread the remaining mousse over the top, smoothing the surface.
  15. Refrigerate the assembled cake for at least 4 hours to allow the mousse to set.
  16. Garnish with a dollop of whipped cream and a sprinkle of chocolate shavings before serving.

Notes

Ensure the cake cools completely before adding the mousse for the best texture. Use high-quality chocolate for a richer flavor.
