Instructions
- Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
- Sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter with the sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Alternately add the dry mixture and the buttermilk, mixing until just combined.
- Pour the batter into the pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely in the pan.
- In a heatproof bowl, melt the chopped chocolate and butter over simmering water, stirring until smooth; set aside to cool slightly.
- Beat the egg whites until soft peaks form, gradually adding 1/4 cup sugar until stiff peaks are achieved.
- Mix the egg yolks into the cooled chocolate mixture, then gently fold in the whipped egg whites until no streaks remain.
- In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form, then fold it into the chocolate mixture to complete your mousse.
- Carefully slice the cooled cake horizontally into two layers.
- Spread half of the mousse evenly over the bottom layer and top with the second layer.
- Spread the remaining mousse over the top, smoothing the surface.
- Refrigerate the assembled cake for at least 4 hours to allow the mousse to set.
- Garnish with a dollop of whipped cream and a sprinkle of chocolate shavings before serving.

Ensure the cake cools completely before adding the mousse for the best texture. Use high-quality chocolate for a richer flavor.
