Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well blended. Press firmly into the bottom of a 9-inch springform pan. Freeze while you prepare the filling.
  2. In a large bowl, beat cream cheese until smooth and creamy. Add sweetened condensed milk, heavy cream, and vanilla. Mix until smooth. Stir in the melted chocolate chips and cocoa powder until fully incorporated.
  3. Pour the cheesecake ice cream mixture over the chilled crust. Smooth the top, cover with plastic wrap, and freeze for 6 hours or overnight until firm.
  4. Before serving, drizzle with chocolate sauce, add a swirl of whipped cream, and sprinkle with extra graham cracker crumbs.
