Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. Bake the crust for 8-10 minutes or until lightly golden. Remove from the oven and let cool.
  4. In a large bowl, beat the softened cream cheese until smooth. Add sweetened condensed milk and mix until well blended.
  5. In another bowl, whip heavy cream and vanilla extract until soft peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until combined.
  7. Pour the cheesecake ice cream mixture over the cooled crust.
  8. Freeze for at least 4-6 hours or until solid.
