Description

A delicious and nutritious meal featuring roasted sweet potatoes, savory black beans, and juicy grilled chicken, topped with fresh cilantro and lime.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, chipotle chili powder, smoked paprika, cumin, salt, and pepper.
  3. Toss the diced sweet potatoes in the spice mixture and spread them on a baking sheet. Roast for about 25-30 minutes or until tender.
  4. While the sweet potatoes are roasting, season the chicken breasts with the spice mixture and grill or pan-cook over medium heat for about 6-7 minutes on each side or until fully cooked. Slice the chicken.
  5. In serving bowls, layer the roasted sweet potatoes, black beans, and sliced chicken.
  6. Garnish with fresh cilantro and serve with lime wedges.

Notes

Keep leftovers in an airtight container in the refrigerator for up to 3 days. You can prepare the components ahead of time and assemble the bowl when ready to eat.
