- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chipotle chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, chipotle chili powder, smoked paprika, cumin, salt, and pepper.
- Toss the diced sweet potatoes in the spice mixture and spread them on a baking sheet. Roast for about 25-30 minutes or until tender.
- While the sweet potatoes are roasting, season the chicken breasts with the spice mixture and grill or pan-cook over medium heat for about 6-7 minutes on each side or until fully cooked. Slice the chicken.
- In serving bowls, layer the roasted sweet potatoes, black beans, and sliced chicken.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
Keep leftovers in an airtight container in the refrigerator for up to 3 days. You can prepare the components ahead of time and assemble the bowl when ready to eat.
