- 200 g butter cookies
- 90 g butter
- 150 g milk chocolate bars
- 500 g lean curd
- 400 g sour cream
- 200 g sugar
- 1 pack vanilla sugar
- 1 tablespoon cornstarch
- 2 eggs (size M)
- 50 ml neutral food oil
Instructions
- Preheat the oven to 160°C (140°C for circulating air). Line a springform pan (Ø 26cm) with baking paper.
- Finely grind the butter cookies in a freezer bag or food processor. Melt the butter in a saucepan, add the crumbs, and mix well.
- Press this mixture firmly into the bottom of the prepared pan and refrigerate.
- Roughly chop the chocolate bars and set aside some pieces for garnish.
- In a bowl, mix the curd with sour cream, sugar, vanilla sugar, and cornstarch. Add the eggs and oil, then stir in the chopped chocolate.
- Pour this mixture over the biscuit base, smoothing the top.
- Bake in the preheated oven’s lower third for about 55 minutes. After 55 minutes, sprinkle the reserved chocolate pieces on top and bake for an additional 10 minutes.
- Let the cheesecake cool completely on a rack, then refrigerate for at least 4 hours, preferably overnight, before serving.
Notes
For best results, prepare the day before and store the cake covered in the fridge. Experiment with different chocolates or add fruit for a fun twist.
