- 1 can (15 oz / 400 g) chickpeas, drained & rinsed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Feta cheese, crumbled
- Whole wheat wraps or tortillas
- Leafy greens (like spinach or lettuce)
- Roasted red pepper yogurt sauce
Instructions
- In a skillet, heat olive oil over medium heat. Add chickpeas, smoked paprika, and garlic powder, sautéing until heated through.
- Mash or slightly crush the chickpeas.
- Lay out the wraps and spread some roasted red pepper yogurt sauce on each.
- Add a layer of sautéed chickpeas, crumbled feta, and leafy greens.
- Roll the wraps tightly and slice in half. Serve immediately.
Notes
Serve with extra roasted red pepper yogurt sauce on the side for dipping. This wrap is best enjoyed fresh.
