Ingredients

  • 1 can (15 oz / 400 g) chickpeas, drained & rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Feta cheese, crumbled
  • Whole wheat wraps or tortillas
  • Leafy greens (like spinach or lettuce)
  • Roasted red pepper yogurt sauce

Instructions

  1. In a skillet, heat olive oil over medium heat. Add chickpeas, smoked paprika, and garlic powder, sautéing until heated through.
  2. Mash or slightly crush the chickpeas.
  3. Lay out the wraps and spread some roasted red pepper yogurt sauce on each.
  4. Add a layer of sautéed chickpeas, crumbled feta, and leafy greens.
  5. Roll the wraps tightly and slice in half. Serve immediately.

Notes

Serve with extra roasted red pepper yogurt sauce on the side for dipping. This wrap is best enjoyed fresh.
