A comforting and wholesome meal that includes tender chicken, creamy mashed potatoes, and fresh veggies, perfect for family dinner or a cozy weeknight meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 3 medium russet potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/3 cup whole milk
  • Salt to taste
  • Mixed lettuce (romaine, red leaf)
  • 1/2 cup shredded carrots
  • 1/4 red onion, sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/2 cucumber, sliced
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tbsp olive oil (for salad dressing)
  • Chopped parsley (garnish)
  • Pinch of paprika (for mashed potatoes garnish)

Instructions

  1. Rub the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and black pepper. Sear them on medium-high heat for 5-6 minutes on each side until golden brown. Let them rest before slicing.
  2. Boil the chopped potatoes in salted water for about 12-15 minutes until they are fork-tender. Drain and mash them with butter, warm milk, and salt to taste.
  3. In a bowl, mix the lettuce, shredded carrots, red onion, cucumber, and red bell pepper. Drizzle with olive oil and apple cider vinegar, then toss everything together.
  4. On each plate, scoop a portion of creamy mashed potatoes, sprinkle with paprika and chopped parsley, and add sliced chicken and salad on the side.
  5. Sprinkle some extra chopped parsley over the plated meal for a colorful touch.

Notes

For extra flavor, marinate the chicken in the spices for a few hours before cooking. Make the mashed potatoes creamier by adding more butter or milk if desired.
