- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt & black pepper to taste
- 3 medium russet potatoes, peeled and chopped
- 1/4 cup butter
- 1/3 cup whole milk
- Salt to taste
- Mixed lettuce (romaine, red leaf)
- 1/2 cup shredded carrots
- 1/4 red onion, sliced
- 1/2 red bell pepper, thinly sliced
- 1/2 cucumber, sliced
- 1 tbsp apple cider vinegar or lemon juice
- 1 tbsp olive oil (for salad dressing)
- Chopped parsley (garnish)
- Pinch of paprika (for mashed potatoes garnish)
Instructions
- Rub the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and black pepper. Sear them on medium-high heat for 5-6 minutes on each side until golden brown. Let them rest before slicing.
- Boil the chopped potatoes in salted water for about 12-15 minutes until they are fork-tender. Drain and mash them with butter, warm milk, and salt to taste.
- In a bowl, mix the lettuce, shredded carrots, red onion, cucumber, and red bell pepper. Drizzle with olive oil and apple cider vinegar, then toss everything together.
- On each plate, scoop a portion of creamy mashed potatoes, sprinkle with paprika and chopped parsley, and add sliced chicken and salad on the side.
- Sprinkle some extra chopped parsley over the plated meal for a colorful touch.
Notes
For extra flavor, marinate the chicken in the spices for a few hours before cooking. Make the mashed potatoes creamier by adding more butter or milk if desired.
