Ingredients

  • 4 bone-in skin-on chicken thighs
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard (optional)

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken thighs, skin side down, and cook until golden brown and cooked through, about 5-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
  6. Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the pan.
  7. Stir in the heavy cream and both mustards, mixing well.
  8. Return the chicken to the skillet, spooning the sauce over the top.
  9. Simmer for a few more minutes to heat through.
  10. Serve hot.

Notes

This dish pairs well with mashed potatoes, rice, or a simple green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
