- 4 bone-in skin-on chicken thighs
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard (optional)
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken thighs, skin side down, and cook until golden brown and cooked through, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the pan.
- Stir in the heavy cream and both mustards, mixing well.
- Return the chicken to the skillet, spooning the sauce over the top.
- Simmer for a few more minutes to heat through.
- Serve hot.
Notes
This dish pairs well with mashed potatoes, rice, or a simple green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
