Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Taco shells
  • Strawberries
  • Onion
  • Lime juice
  • Cilantro
  • Salt
  • Pepper

Instructions

  1. In a bowl, combine olive oil, cumin, chili powder, paprika, and garlic powder. Marinate the chicken breasts in the mixture for at least 30 minutes.
  2. Grill or cook the chicken in a skillet over medium heat until fully cooked, about 6-7 minutes on each side. Allow the chicken to rest before slicing.
  3. For the strawberry salsa, chop strawberries and onion. Mix them with lime juice, cilantro, salt, and pepper.
  4. Serve the sliced chicken in taco shells and top with the strawberry salsa.

Notes

Serve with avocado or sour cream, and lime wedges on the side for added flavor.
