Description
Healthy and tasty grilled chicken wrapped in crisp lettuce leaves with fresh veggies and sauces.
Ingredients

- 1 1/2 lbs boneless skinless chicken breasts (or thighs), cut into bite-size pieces
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 1/2 tsp ground cumin
- Lettuce leaves for wrapping
- Optional toppings: diced tomatoes, cucumber, tzatziki sauce
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, and cumin. Mix well.
- Add the chicken pieces to the marinade and let them marinate for at least 30 minutes.
- Preheat a grill or grill pan to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the chicken skewers for about 8-10 minutes, turning occasionally, until fully cooked.
- Remove from the grill and let it rest for a few minutes.
- To serve, place grilled chicken onto lettuce leaves and add optional toppings as desired.
- Wrap the lettuce around the filling and enjoy.
Notes
Let the chicken marinate longer for a stronger flavor. Use different lettuce types for variety.
