A delicious dish that combines tender chicken breast with a rich, buttery garlic sauce served over fluffy Parmesan cheese rice.

- 1 lb chicken breast, sliced into strips
- 1/2 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 3/4 cup chicken broth
- 1 tbsp lemon juice
- 1/4 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes (optional)
- Chopped fresh parsley, for garnish
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add 2 cloves of minced garlic and sauté for 1 minute. Stir in 1 cup of long-grain white rice and toast for 1-2 minutes.
- Add 2 cups of chicken broth, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat, stir in 1/2 cup of grated Parmesan cheese, and fluff with a fork. Set aside.
- In a shallow dish, mix together 1/2 cup of all-purpose flour, 1 teaspoon of garlic powder, 1 teaspoon of Italian seasoning, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Dredge the chicken strips in this flour mixture.
- In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Cook the chicken in the skillet for 3-4 minutes per side until it is golden and cooked through. Remove the chicken from the pan and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and 4 cloves of minced garlic. Cook for 30 seconds, then pour in 3/4 cup of chicken broth and 1 tablespoon of lemon juice. Let it simmer for 2-3 minutes.
- Stir in 1/4 cup of grated Parmesan cheese and red pepper flakes if desired. Return the chicken to the pan, tossing to coat in the sauce.
- Plate the garlic Parmesan rice first, then top it with the chicken scampi. Garnish with fresh parsley and extra Parmesan cheese if you like.
Notes
Make sure not to overcrowd the skillet when cooking the chicken for even browning. You can use other types of pasta or grains instead of rice.
