Description

A delightful Italian dish featuring tender chicken in a zesty lemon and caper sauce, perfect for any dinner occasion.


Ingredients

  • 2 large chicken breasts, halved horizontally
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 1/4 cup capers, drained
  • Fresh parsley, chopped (for garnish)
  • Salt & pepper, to taste
  • Lemon slices (for garnish)

Instructions

  1. Season chicken with salt and pepper. Dredge the chicken lightly in flour, shaking off excess.
  2. Heat olive oil and 1 tbsp of butter in a skillet over medium-high heat. Cook chicken until golden and cooked through, about 3–4 minutes per side. Remove the chicken and set aside.
  3. In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any brown bits from the pan. Stir in the remaining butter.
  4. Return the chicken to the skillet and simmer for another 2–3 minutes to soak up the flavors.
  5. Garnish with chopped parsley and lemon slices. Serve hot with pasta, rice, or veggies.

Notes

Use freshly squeezed lemon juice for the best flavor. Adjust capers according to taste.
