- 2 large chicken breasts, halved horizontally
- 1/2 cup all-purpose flour (for dredging)
- 2 tbsp olive oil
- 3 tbsp butter, divided
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice (about 1–2 lemons)
- 1/4 cup capers, drained
- Fresh parsley, chopped (for garnish)
- Salt & pepper, to taste
- Lemon slices (for garnish)
Instructions
- Season chicken with salt and pepper. Dredge the chicken lightly in flour, shaking off excess.
- Heat olive oil and 1 tbsp of butter in a skillet over medium-high heat. Cook chicken until golden and cooked through, about 3–4 minutes per side. Remove the chicken and set aside.
- In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any brown bits from the pan. Stir in the remaining butter.
- Return the chicken to the skillet and simmer for another 2–3 minutes to soak up the flavors.
- Garnish with chopped parsley and lemon slices. Serve hot with pasta, rice, or veggies.
Notes
Use freshly squeezed lemon juice for the best flavor. Adjust capers according to taste.
