A delicious and easy meal combining tender chicken, fresh vegetables, and the bright flavors of pesto.
Ingredients

- 2 boneless, skinless chicken breasts
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon brown sugar (or honey)
- 2 tablespoons soy sauce
- 1 cup cherry tomatoes, halved
- 8 oz orecchiette pasta
- 1 teaspoon kosher salt
- 1/2 cup pesto, homemade or store-bought
- 2 cups spinach
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Cook the orecchiette pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned and cooked through. Remove from skillet and let rest.
- In the same skillet, add balsamic vinegar, brown sugar or honey, and soy sauce. Stir until syrupy.
- Add cherry tomatoes and spinach, and cook until spinach wilts.
- Slice the chicken and return to the skillet. Add pesto and the cooked pasta, and toss to combine.
- Serve with grated Parmesan cheese and fresh basil on top.
Notes
Make sure not to overcook the chicken; it should be juicy and tender. Feel free to add other vegetables for added nutrition.
