Ingredients

  • 6 oz rice noodles, cooked and cooled
  • 1 carrot, julienned
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 tbsp chopped mint (optional)
  • 1/4 cup crushed peanuts
  • 2 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1 tbsp warm water

Instructions

  1. Whisk together all dressing ingredients until smooth.
  2. In a large bowl, combine chicken, noodles, veggies, and herbs.
  3. Pour dressing over salad and toss until fully coated.
  4. Top with crushed peanuts and extra herbs if desired. Serve chilled or at room temperature.

Notes

This salad can be stored in an airtight container in the refrigerator for 2-3 days. For best results, add dressing just before serving.
