A fresh and colorful chicken noodle salad with a delicious peanut-lime dressing, perfect for lunch or dinner.
Ingredients

- 2 cups cooked shredded chicken breast
- 6 oz rice noodles, cooked and cooled
- 1 carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1/4 cup chopped cilantro
- 2 tbsp chopped mint (optional)
- 1/4 cup crushed peanuts
- 2 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp sesame oil
- 1 tsp honey
- 1 clove garlic, minced
- 1 tbsp warm water
Instructions
- Whisk together all dressing ingredients until smooth.
- In a large bowl, combine chicken, noodles, veggies, and herbs.
- Pour dressing over salad and toss until fully coated.
- Top with crushed peanuts and extra herbs if desired. Serve chilled or at room temperature.
Notes
This salad can be stored in an airtight container in the refrigerator for 2-3 days. For best results, add dressing just before serving.
