Ingredients

  • 2 chicken breasts, cubed
  • 2 tbsp olive oil or butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream or sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1 tbsp all-purpose flour
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles, cooked (for serving)

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown on both sides, about 5-7 minutes. Remove from skillet and set aside.
  2. Add remaining olive oil or butter to the skillet. Sauté onions and garlic until fragrant, about 2 minutes. Add mushrooms and cook until softened and browned, about 5 minutes.
  3. Sprinkle flour over the mushroom mixture and stir well. Cook for 1 minute to remove raw flour taste. Slowly pour in chicken broth while stirring to avoid lumps. Stir in heavy cream, Dijon mustard, and paprika.
  4. Return the cooked chicken to the skillet. Simmer everything for 10 minutes until the sauce thickens and the chicken is fully cooked.
  5. Spoon over cooked egg noodles or your preferred pasta. Garnish with chopped parsley and freshly ground black pepper.

Notes

For extra flavor, marinate chicken in Dijon mustard and paprika before cooking. Substitute chicken with extra mushrooms or tofu for a vegetarian version.
