- 4 bone-in, skin-on chicken thighs (or a mix of thighs and drumsticks)
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 medium bell pepper, sliced (any color)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the chicken thighs and brown on both sides. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, minced garlic, and sliced bell pepper. Sauté until softened.
- Return the chicken to the skillet, add desired seasonings, and simmer until cooked through.
- Serve hot.
Notes
Brown the chicken well for a richer flavor. Feel free to add other vegetables like carrots, zucchini, or mushrooms.
