Description

Ingredients

  • 4 bone-in, skin-on chicken thighs (or a mix of thighs and drumsticks)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, sliced (any color)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chicken thighs and brown on both sides. Remove from the skillet and set aside.
  3. In the same skillet, add the diced onion, minced garlic, and sliced bell pepper. Sauté until softened.
  4. Return the chicken to the skillet, add desired seasonings, and simmer until cooked through.
  5. Serve hot.

Notes

Brown the chicken well for a richer flavor. Feel free to add other vegetables like carrots, zucchini, or mushrooms.
