Description

A classic Italian dish featuring tender chicken, fettuccine pasta, and a rich creamy Alfredo sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 lb fettuccine pasta
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Parmesan cheese
  • 1 tbsp butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tbsp of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside to rest before slicing into strips.
  2. While the chicken is cooking, bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions. Drain and set aside, reserving some pasta water.
  3. In the same skillet, add the remaining 1 tbsp of olive oil and sauté the garlic for 1-2 minutes, until fragrant. Add the heavy cream, milk, and butter, bringing the mixture to a simmer. Let it cook for 3-4 minutes until the sauce thickens slightly.
  4. Stir in the Parmesan cheese and cook for another 2-3 minutes, stirring constantly, until the sauce is smooth and creamy. Season with salt and pepper to taste.
  5. Add the cooked fettuccine to the skillet, tossing it in the Alfredo sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Top with the sliced chicken.
  6. Garnish with chopped parsley and a sprinkle of extra Parmesan cheese, then serve immediately.

Notes

Use freshly grated Parmesan cheese for the best flavor. To reheat leftovers, warm gently and add a splash of milk or cream.
