A classic Italian dish featuring tender chicken, fettuccine pasta, and a rich creamy Alfredo sauce.

- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 lb fettuccine pasta
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup grated Parmesan cheese
- 1 tbsp butter
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tbsp of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside to rest before slicing into strips.
- While the chicken is cooking, bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions. Drain and set aside, reserving some pasta water.
- In the same skillet, add the remaining 1 tbsp of olive oil and sauté the garlic for 1-2 minutes, until fragrant. Add the heavy cream, milk, and butter, bringing the mixture to a simmer. Let it cook for 3-4 minutes until the sauce thickens slightly.
- Stir in the Parmesan cheese and cook for another 2-3 minutes, stirring constantly, until the sauce is smooth and creamy. Season with salt and pepper to taste.
- Add the cooked fettuccine to the skillet, tossing it in the Alfredo sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Top with the sliced chicken.
- Garnish with chopped parsley and a sprinkle of extra Parmesan cheese, then serve immediately.
Notes
Use freshly grated Parmesan cheese for the best flavor. To reheat leftovers, warm gently and add a splash of milk or cream.
