Description

A delicious and satisfying dish combining tender chicken, creamy feta cheese, and flavorful tomatoes, perfect for a quick weeknight dinner.


Ingredients

  • 1 block (7-8 oz) feta cheese
  • 2 cups cherry tomatoes (halved)
  • 4 cloves garlic (minced)
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 8 oz pasta (penne or rotini)
  • 2 cups cooked chicken (diced)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the feta cheese in the center of a baking dish. Surround it with cherry tomatoes and minced garlic. Drizzle with olive oil and sprinkle with oregano.
  3. Bake for 30 minutes, or until the feta is creamy and the tomatoes are blistered.
  4. Meanwhile, cook the pasta according to package instructions. Reserve 1 cup of pasta water and drain the rest.
  5. Once the feta mixture is done, combine it with the cooked pasta. Add the diced chicken and mix well, adding reserved pasta water as needed to reach your desired consistency.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of water or olive oil to keep it moist.
