- 1 block (7-8 oz) feta cheese
- 2 cups cherry tomatoes (halved)
- 4 cloves garlic (minced)
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 8 oz pasta (penne or rotini)
- 2 cups cooked chicken (diced)
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the feta cheese in the center of a baking dish. Surround it with cherry tomatoes and minced garlic. Drizzle with olive oil and sprinkle with oregano.
- Bake for 30 minutes, or until the feta is creamy and the tomatoes are blistered.
- Meanwhile, cook the pasta according to package instructions. Reserve 1 cup of pasta water and drain the rest.
- Once the feta mixture is done, combine it with the cooked pasta. Add the diced chicken and mix well, adding reserved pasta water as needed to reach your desired consistency.
- Season with salt and pepper to taste.
- Garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of water or olive oil to keep it moist.
