Ingredients

  • 1 block (7-8 oz) feta cheese
  • 2 cups cherry tomatoes (halved)
  • 4 cloves garlic (minced)
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 8 oz pasta (penne or your choice)
  • 2 cups cooked chicken (shredded or diced)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). In a baking dish, combine the feta cheese, cherry tomatoes, minced garlic, olive oil, and dried oregano. Season with salt and pepper.
  2. Bake for about 30 minutes, until the tomatoes burst and the feta is soft.
  3. While the feta and tomatoes are baking, cook the pasta according to package instructions. Drain and set aside.
  4. Once baked, remove the dish from the oven and mix everything together to create a creamy sauce.
  5. Add the cooked chicken and pasta to the dish, tossing to combine.
  6. Serve hot, garnished with fresh basil.
