Delicious chicken fajita quesadillas with peppers and melted cheese, perfect for lunch or dinner.

- 1 tbsp olive oil
- 1/2 lb cooked chicken breast, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/2 onion, sliced
- 1 tsp fajita seasoning
- 4 large flour tortillas
- 1 1/2 cups shredded Mexican blend cheese
- Fresh cilantro, chopped (for garnish)
- Optional: sour cream, salsa, guacamole for serving
Instructions
- In a skillet, heat the olive oil over medium-high heat. Add the bell peppers and onion, and sauté for 5–6 minutes until they are slightly charred and soft.
- Stir in the cooked chicken and fajita seasoning. Cook for another 2–3 minutes to heat everything through and coat the chicken and veggies in the seasoning.
- On one half of each tortilla, sprinkle cheese. Then, add the chicken and veggie mixture, followed by more cheese. Fold the tortilla over to seal it.
- In a clean skillet or griddle over medium heat, cook each quesadilla for 2–3 minutes on each side until they are golden and crispy, and the cheese has melted.
- Slice the quesadillas into wedges. Garnish with fresh cilantro and serve with your favorite dips like sour cream, salsa, or guacamole.
Notes
Don’t overcrowd the skillet when sautéing the veggies; this helps them to cook evenly. Feel free to use any kind of cheese you love or have on hand.
