A fun and tasty dish that combines classic fajita flavors with pasta, featuring tender chicken, colorful peppers, and a creamy sauce.


Ingredients

  • 2 chicken breasts, sliced into strips
  • 8 oz bowtie pasta (or any short pasta)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 2 tbsp olive oil
  • 2 tsp fajita seasoning
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Boil pasta in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and cook chicken with fajita seasoning until browned and cooked through. Remove and set aside.
  3. Add a bit more oil if needed, then cook the onions and peppers until soft and slightly charred.
  4. Return chicken to the skillet, add salsa, sour cream, and cheese. Stir everything together until creamy and hot.
  5. Add the cooked pasta to the skillet and stir to coat.
  6. Garnish with cilantro and a dollop of sour cream before serving.

Notes

For extra flavor, marinate the chicken in fajita seasoning and lime juice before cooking. You can add corn or zucchini for additional veggies.
