- 2 chicken breasts, sliced into strips
- 8 oz bowtie pasta (or any short pasta)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 tbsp olive oil
- 2 tsp fajita seasoning
- 1 cup salsa
- 1/2 cup sour cream
- 1 cup shredded cheddar or Mexican blend cheese
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Boil pasta in salted water until al dente. Drain and set aside.
- In a large skillet, heat olive oil and cook chicken with fajita seasoning until browned and cooked through. Remove and set aside.
- Add a bit more oil if needed, then cook the onions and peppers until soft and slightly charred.
- Return chicken to the skillet, add salsa, sour cream, and cheese. Stir everything together until creamy and hot.
- Add the cooked pasta to the skillet and stir to coat.
- Garnish with cilantro and a dollop of sour cream before serving.
Notes
For extra flavor, marinate the chicken in fajita seasoning and lime juice before cooking. You can add corn or zucchini for additional veggies.
