A delightful mix of bold flavors, Chicken Fajita Pasta combines tender chicken, fresh vegetables, and a creamy sauce with pasta for a comforting meal.
Ingredients

- 2 chicken breasts, cut into bite-sized strips
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 tsp fajita seasoning (or taco seasoning)
- 8 oz bowtie (farfalle) pasta
- 1 1/4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar or Monterey Jack
- Salt & pepper, to taste
- Sour cream & chopped green onions (for topping)
Instructions
- Cook the pasta according to the package directions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken strips and season with fajita seasoning. Cook until the chicken is browned and cooked through. Remove the chicken and set aside.
- In the same skillet, add the sliced onions and bell peppers. Sauté until they are soft.
- Return the chicken to the skillet. Add the chicken broth and heavy cream, then bring everything to a simmer.
- Stir in the cooked pasta and cheese. Mix well until the cheese is melted and the sauce is creamy.
- Taste and season with salt and pepper as needed.
- Serve hot, topped with a dollop of sour cream and chopped green onions.
Notes
For extra flavor, marinate the chicken in fajita seasoning a few hours before cooking. You can also add black beans or corn for added texture and flavor.
