Description

A delightful mix of bold flavors, Chicken Fajita Pasta combines tender chicken, fresh vegetables, and a creamy sauce with pasta for a comforting meal.


Ingredients

  • 2 chicken breasts, cut into bite-sized strips
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 tsp fajita seasoning (or taco seasoning)
  • 8 oz bowtie (farfalle) pasta
  • 1 1/4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar or Monterey Jack
  • Salt & pepper, to taste
  • Sour cream & chopped green onions (for topping)

Instructions

  1. Cook the pasta according to the package directions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chicken strips and season with fajita seasoning. Cook until the chicken is browned and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the sliced onions and bell peppers. Sauté until they are soft.
  5. Return the chicken to the skillet. Add the chicken broth and heavy cream, then bring everything to a simmer.
  6. Stir in the cooked pasta and cheese. Mix well until the cheese is melted and the sauce is creamy.
  7. Taste and season with salt and pepper as needed.
  8. Serve hot, topped with a dollop of sour cream and chopped green onions.

Notes

For extra flavor, marinate the chicken in fajita seasoning a few hours before cooking. You can also add black beans or corn for added texture and flavor.
