Description

A delicious and healthy bowl filled with chicken, couscous, butternut squash, and feta cheese, perfect for lunch or dinner.


Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 cup broccoli florets
  • 1/2 tsp ground cumin
  • 1 cup couscous
  • 2 cups vegetable or chicken broth
  • 1 cup butternut squash (cubed)
  • 1/2 cup feta cheese (crumbled)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, paprika, garlic powder, ground cumin, salt, and pepper.
  3. Rub the spice mixture onto the chicken.
  4. On a baking sheet, toss the butternut squash and broccoli with olive oil, salt, and pepper.
  5. Bake the chicken and vegetables for about 20-25 minutes, or until the chicken reaches 165°F (75°C) and the vegetables are tender.
  6. In the meantime, cook couscous according to package instructions using vegetable or chicken broth.
  7. Once cooked, fluff the couscous with a fork.
  8. Serve the couscous topped with sliced chicken, roasted vegetables, crumbled feta, and fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove until heated through.
