Description
A delicious and healthy bowl filled with chicken, couscous, butternut squash, and feta cheese, perfect for lunch or dinner.
Ingredients

- 2 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 cup broccoli florets
- 1/2 tsp ground cumin
- 1 cup couscous
- 2 cups vegetable or chicken broth
- 1 cup butternut squash (cubed)
- 1/2 cup feta cheese (crumbled)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, paprika, garlic powder, ground cumin, salt, and pepper.
- Rub the spice mixture onto the chicken.
- On a baking sheet, toss the butternut squash and broccoli with olive oil, salt, and pepper.
- Bake the chicken and vegetables for about 20-25 minutes, or until the chicken reaches 165°F (75°C) and the vegetables are tender.
- In the meantime, cook couscous according to package instructions using vegetable or chicken broth.
- Once cooked, fluff the couscous with a fork.
- Serve the couscous topped with sliced chicken, roasted vegetables, crumbled feta, and fresh parsley if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove until heated through.
