Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices ham
  • 4 slices Swiss or Gruyère cheese
  • 1 cup breadcrumbs (panko for extra crisp)
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • Olive oil or butter (for searing)
  • 2 tbsp butter (for sauce)
  • 1 tbsp flour (for sauce)
  • 1 cup milk
  • 1 tbsp Dijon mustard
  • 1/4 cup grated Parmesan
  • Salt and pepper, to taste (for sauce)

Instructions

  1. Pound chicken breasts to 1/4-inch thick. Season with salt and pepper. Layer each breast with ham and cheese, then roll up tightly. Secure the rolls with toothpicks or tie with kitchen twine.
  2. Coat each roll in flour, dip in beaten eggs, then cover in breadcrumbs.
  3. In a skillet, heat olive oil or butter and sear the chicken until golden (about 2–3 minutes per side). Transfer to a baking dish and bake at 375°F (190°C) for 20–25 minutes until cooked through.
  4. In a saucepan, melt butter and whisk in flour. Gradually add milk and cook until thickened. Stir in Dijon mustard and grated Parmesan. Season with salt and pepper to taste.
  5. Slice the chicken rolls and drizzle with the creamy Dijon sauce. Serve with a fresh salad or roasted vegetables.

Notes

Use panko breadcrumbs for extra crunch and be careful not to overcook the chicken to keep it juicy.
