- 4 boneless, skinless chicken breasts
- 4 slices ham
- 4 slices Swiss or Gruyère cheese
- 1 cup breadcrumbs (panko for extra crisp)
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper, to taste
- Olive oil or butter (for searing)
- 2 tbsp butter (for sauce)
- 1 tbsp flour (for sauce)
- 1 cup milk
- 1 tbsp Dijon mustard
- 1/4 cup grated Parmesan
- Salt and pepper, to taste (for sauce)
Instructions
- Pound chicken breasts to 1/4-inch thick. Season with salt and pepper. Layer each breast with ham and cheese, then roll up tightly. Secure the rolls with toothpicks or tie with kitchen twine.
- Coat each roll in flour, dip in beaten eggs, then cover in breadcrumbs.
- In a skillet, heat olive oil or butter and sear the chicken until golden (about 2–3 minutes per side). Transfer to a baking dish and bake at 375°F (190°C) for 20–25 minutes until cooked through.
- In a saucepan, melt butter and whisk in flour. Gradually add milk and cook until thickened. Stir in Dijon mustard and grated Parmesan. Season with salt and pepper to taste.
- Slice the chicken rolls and drizzle with the creamy Dijon sauce. Serve with a fresh salad or roasted vegetables.
Notes
Use panko breadcrumbs for extra crunch and be careful not to overcook the chicken to keep it juicy.
