Ingredients

- 500g (1 lb) boneless chicken thighs or breasts
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 4 medium potatoes, cubed
- 1 cup plain yogurt
- 1 cucumber, diced
- Fresh dill or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine the chicken, olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate for at least 30 minutes.
- Place the cubed potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until golden and crispy.
- Meanwhile, grill or bake the marinated chicken until cooked through, about 6-7 minutes on each side.
- For the yogurt dip, mix the plain yogurt with diced cucumber, salt, and fresh dill or parsley.
- Assemble the chicken bowl by placing roasted potatoes at the base, topping with sliced chicken, and serving with the yogurt dip on the side.
Notes
Marinate the chicken longer for enhanced flavor. You can also add other vegetables for additional nutrition.
