Ingredients

  • 8 oz egg noodles
  • 2 cups mixed vegetables (carrots, peas, bell peppers)
  • 4 cups chicken broth
  • 3 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 onion, diced
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a pot, cook egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until fragrant.
  3. Add chopped chicken breast to the skillet, cooking until no longer pink.
  4. Stir in mixed vegetables and cook until tender.
  5. Pour in chicken broth and soy sauce, bringing to a simmer.
  6. Add the cooked noodles to the skillet, mixing everything together.
  7. Season with salt and pepper to taste. Serve warm.

Notes

Feel free to switch up the vegetables according to what you have on hand. Use frozen mixed vegetables if preferred.
