Delicious treats that combine crunchy cereal, sweet peanut butter, and gooey chocolate and butterscotch toppings. Perfect for parties or simple snacks.

- 6 cups rice or corn Chex cereal
- 1 cup light corn syrup
- 1 cup sugar
- 1 1/2 cups peanut butter (for the cereal mixture)
- 2 cups semi-sweet chocolate chips
- 2 cups butterscotch chips
- 1/2 cup peanut butter (for the topping)
- 1 teaspoon vanilla extract
Instructions
- Grease a large round bowl and pour the Chex cereal into it. Set aside. Grease a 9×13 inch pan and set aside.
- In a saucepan, combine the corn syrup and sugar. Stir over medium-high heat until it comes to a boil. Remove from heat and stir in 1 1/2 cups of peanut butter until fully mixed. Pour this mixture over the cereal and fold gently to coat the cereal evenly. Transfer the coated cereal mixture to the prepared 9×13 inch pan and press it down gently.
- In a microwave-safe bowl, combine the butterscotch chips, chocolate chips, 1/2 cup peanut butter, and vanilla extract. Microwave for 30 seconds at a time, stirring well after each interval until it’s completely melted and smooth. This should take about 1 minute and 30 seconds.
- Pour the melted mixture over the cereal mixture in the pan, spreading it evenly over the top.
- Let the bars cool completely at room temperature before cutting them into squares. Enjoy in moderation!
Notes
Press the cereal mixture firmly in the pan for better bars. Experiment with different types of cereal or toppings.
