A delicious and refreshing homemade ice cream combining sweet cherries and rich vanilla with added chocolate chunks.
Ingredients

- 2 cups fresh cherries, pitted and halved
- 2 tbsp water
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- 2 cups heavy whipping cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 tsp vanilla extract
- Pinch of coarse sea salt
- 1/2 cup chocolate chunks
Instructions
- Prepare the Cherry Filling: In a saucepan, stir together cherries, water, sugar, and cornstarch. Heat over medium heat for 8-10 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let the filling cool on the counter for about 1 hour. Refrigerate until fully chilled.
- Make the Ice Cream Base: In a large bowl, whisk together heavy whipping cream, whole milk, granulated sugar, vanilla extract, and a pinch of sea salt until the sugar is completely dissolved.
- Churn the Ice Cream: Pour the ice cream mixture into your ice cream maker and churn according to the manufacturer’s directions for about 20-30 minutes. As it thickens, slowly add the chocolate chunks.
- Layer and Freeze: In a container, spoon 1/3 of the vanilla ice cream and add a layer of chilled cherry filling. Repeat two more times. Place wax paper on top to prevent freezer burn, cover tightly, and freeze for at least 2-3 hours before serving.
Notes
Use ripe, fresh cherries for best flavor. Make sure to cool the cherry filling thoroughly before mixing it into the ice cream.
