  • 4 large eggs

  • 1 cup buttermilk
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cherry preserves
  • 2 tbsp heavy cream
  • 1/2 tsp vanilla extract (for frosting)
  • Fresh cherries (for garnish)
  • White chocolate curls (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Start and end with dry ingredients. Mix until just combined.
  6. Divide the batter evenly among prepared cake pans. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow the cakes to cool completely before assembling.
  8. For the cherry frosting, beat powdered sugar and softened butter together until smooth. Add cherry preserves, heavy cream, and vanilla extract; beat until light and fluffy.
  9. To assemble, place one cake layer on a serving plate. Spread a layer of cherry frosting on top. Repeat with the second layer, then place the final layer on top.
  10. Frost the entire cake with remaining cherry frosting. Garnish with fresh cherries and white chocolate curls.
  11. Chill for 30 minutes before serving.

Notes

For best results, use fresh cherries and quality preserves. Store in an airtight container for up to 3 days.
