  • 1/2 cup butter, room temperature
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup sour cream
  • 1 tbsp vanilla extract
  • 8 oz cream cheese, room temperature
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 2 cups pitted cherries (fresh or frozen)
  • 1 1/2 cups granulated sugar
  • 1/2 tsp salt
  • 1 cup unsalted butter, melted
  • 2 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
  2. In a bowl, whisk together the flour, lemon zest, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until fluffy. Add the egg, sour cream, and vanilla.
  4. Gradually mix the dry ingredients into the wet mixture and press it into the prepared pan.
  5. For the cheesecake filling, beat the cream cheese, sugar, egg, and vanilla until smooth. Pour this over the cake layer and add 1 cup of cherries on top.
  6. For the crumb topping, mix sugar, salt, and flour. Add the melted butter to form crumbs and sprinkle it over the cheesecake layer, adding the remaining cherries.
  7. Bake for 50-55 minutes until a toothpick comes out clean. Cool before lifting out of the pan, slice, and enjoy!

Notes

Make sure your butter and cream cheese are at room temperature. You can use fresh or frozen cherries without thawing. For added flavor, consider almond extract in the cream cheese layer.
