Ingredients

- 1 cup (100g) shredded unsweetened coconut
- 1/2 cup (75g) dried cherries, chopped
- 1/4 cup (60ml) coconut cream or condensed milk
- 2 tbsp (30ml) maple syrup or honey
- 1/2 tsp vanilla extract
- Pinch of salt
- 4 oz (115g) dark chocolate, melted (optional, for dipping)
Instructions
- In a medium mixing bowl, combine the shredded coconut, chopped dried cherries, coconut cream, maple syrup, vanilla extract, and a pinch of salt.
- Mix until the ingredients come together into a sticky dough. If the mixture is too dry, add a little more coconut cream or condensed milk.
- Scoop small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls with your hands.
- Place the formed bites on a parchment-lined tray and refrigerate for at least 30 minutes, or until firm.
- If desired, dip the chilled bites into melted dark chocolate, ensuring they are fully coated.
- Return the bites to the parchment-lined tray and let the chocolate set at room temperature or in the fridge.
- Once set, the Cherry Coconut Bliss Bites are ready to enjoy!
Notes
Store in an airtight container in the fridge for up to one week. For longer storage, freeze with parchment paper layers.
