- 1 box chocolate cake mix (or homemade chocolate cake)
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup water
- 2 cups cherry ice cream (softened)
- 1/2 cup maraschino cherries (chopped)
- 2 cups chocolate ice cream (softened)
- 1/4 cup chocolate syrup
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate (chopped)
- 1 tbsp butter
- Whole maraschino cherries (for garnish)
- Chocolate shavings or sprinkles (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- Prepare the chocolate cake mix according to the package instructions (or your own recipe). Pour the batter into the pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let the cake cool completely, then remove from the pan.
- Soften the cherry ice cream and fold in the chopped maraschino cherries. Spread a layer of cherry ice cream over the cooled cake, pressing it evenly. Freeze the cake for at least 2-3 hours until the ice cream layer is firm.
- Soften the chocolate ice cream and mix in the chocolate syrup. Spread the chocolate ice cream layer over the cherry ice cream, smoothing it out evenly. Freeze the cake for another 2-3 hours.
- In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chopped chocolate and butter. Stir until smooth and glossy. Let it cool for a few minutes before drizzling over the ice cream cake.
- Once the ice cream layers are firm, drizzle the chocolate ganache over the top. Garnish with whole maraschino cherries and chocolate shavings or sprinkles.
- Slice and serve the cake, garnishing each slice as desired.
Notes
Ensure ice cream is slightly softened before spreading. For added texture, consider adding a layer of crushed cookies or fudge sauce between the ice cream layers.
