- 1 1/2 cups chocolate sandwich cookies, crushed
- 1/4 cup granulated sugar
- 1/4 cup melted unsalted butter
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 cup maraschino cherries, drained and chopped
- 1/4 cup granulated sugar (for cherry compote)
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
- Prepare crust: Mix together crushed cookies, sugar, and melted butter. Press this mixture into the bottom of a 9-inch (23 cm) springform pan.
- Prepare ice cream: In a large bowl, combine heavy cream, whole milk, sugar, cocoa powder, and vanilla extract. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Prepare cherry compote: In a saucepan, mix together chopped cherries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens.
- Assemble cake: Spread a layer of ice cream over the crust. Top with a layer of cherry compote. Repeat this process until all the ingredients are used, making sure to end with a layer of ice cream on top.
- Prepare chocolate ganache: In a double boiler, heat chocolate chips and heavy cream while stirring until smooth. Pour this ganache over the top of the assembled cake.
- Freeze cake: Place the cake in the freezer for at least 2 hours before serving.
Notes
Store any leftover cake in the freezer, covered well with plastic wrap or in an airtight container. Feel free to adjust the sweetness based on your taste.
