- 1 cup all-purpose flour
- 2 cups fresh cherries, pitted and halved
- 1/2 cup unsweetened cocoa powder
- 1 cup sugar
- 1/2 cup butter, softened
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, cream together the softened butter and sugar until fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
- Gently fold in the halved cherries and chocolate chips, being careful not to overmix.
- Pour the batter into the prepared cake pan. Smooth the top with a spatula.
- Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- Serve the cake as is, or dust with powdered sugar for extra charm.
Notes
Store any leftover cake in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week. For longer storage, freeze the cake wrapped tightly.
