- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips, melted and slightly cooled
- 1 (21 oz) can cherry pie filling
- Optional: Fresh cherries or chocolate shavings for garnish
Instructions
- Preheat the oven to 325°F (160°C). Combine chocolate cookie crumbs with melted butter in a bowl. Press evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
- In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add sour cream and vanilla extract, mixing until fully combined. Incorporate eggs one at a time, beating well after each addition. Gently fold in melted chocolate until the batter is smooth.
- Pour cheesecake filling over the prepared crust. Bake for 50-60 minutes until the center is set but still slightly jiggly. Turn off the oven, crack the door slightly, and let cool in the oven for 1 hour.
- Spread cherry pie filling evenly over the top of the cooled cheesecake.
- Refrigerate for at least 4 hours or overnight before serving. Garnish with fresh cherries or chocolate shavings if desired.
Notes
Make sure to soften the cream cheese at room temperature for a smooth filling. Letting the cheesecake cool in the oven helps prevent cracks.
