  • 1/2 cup unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups fresh or canned cherries, pitted and halved
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon cornstarch
  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C) and prepare a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs and melted butter, then press into the pan’s bottom to form the crust.
  3. In a large bowl, whip cream cheese until smooth. Add sugar and vanilla, mixing well.
  4. Add the eggs one at a time, mixing after each egg. Fold in the sour cream until smooth.
  5. Pour the cream cheese mixture into the crust and bake for about 1 hour.
  6. Cool the cheesecake in the oven with the door slightly open, then refrigerate for at least 4 hours to set.
  7. For the cherry topping, cook the cherries, sugar, and cornstarch on medium heat until thickened. Let it cool.
  8. For the dark chocolate ganache, melt the dark chocolate chips and heavy cream together in a small saucepan over low heat, stirring until smooth.
  9. Pour the ganache over the cherry topping once cooled and let it set in the refrigerator for an hour before serving.

Notes

Store leftover cheesecake in the refrigerator for 4 to 5 days. Ensure cream cheese is softened for easy mixing, and consider using frozen cherries if fresh ones are unavailable.
