- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted

- 4 large eggs
- 1 cup sour cream
- 2 cups fresh or canned cherries, pitted and halved
- 1/4 cup granulated sugar (for topping)
- 1 tablespoon cornstarch
- 1 cup dark chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 325°F (163°C) and prepare a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs and melted butter, then press into the pan’s bottom to form the crust.
- In a large bowl, whip cream cheese until smooth. Add sugar and vanilla, mixing well.
- Add the eggs one at a time, mixing after each egg. Fold in the sour cream until smooth.
- Pour the cream cheese mixture into the crust and bake for about 1 hour.
- Cool the cheesecake in the oven with the door slightly open, then refrigerate for at least 4 hours to set.
- For the cherry topping, cook the cherries, sugar, and cornstarch on medium heat until thickened. Let it cool.
- For the dark chocolate ganache, melt the dark chocolate chips and heavy cream together in a small saucepan over low heat, stirring until smooth.
- Pour the ganache over the cherry topping once cooled and let it set in the refrigerator for an hour before serving.
Notes
Store leftover cheesecake in the refrigerator for 4 to 5 days. Ensure cream cheese is softened for easy mixing, and consider using frozen cherries if fresh ones are unavailable.
