- 1 cup salted butter, room temperature
- 1 1/2 cups brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 cups graham cracker crumbs (about 12 crackers)
- 2 cups all-purpose flour
- 4 oz cream cheese, room temperature
- 1/2 cup salted butter, softened
- 2 1/2 cups powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1–2 tablespoons cornstarch
- 1/2 cup graham cracker crumbs (about 4 crackers)
- 1 tablespoon salted butter, melted
- 1 (21 oz) can cherry pie filling
Instructions
- In a mixing bowl, cream together the butter and brown sugar until light and fluffy. Add egg and vanilla extract; mix well. Add salt, baking soda, and graham cracker crumbs. Gradually mix in flour.
- Preheat oven to 350°F (175°C) and prepare baking sheets. Scoop portions of dough onto sheets and bake for 10-11 minutes. Allow cookies to cool completely.
- In another bowl, beat cream cheese and softened butter together until smooth. Gradually add powdered sugar and vanilla extract. Add cornstarch for thicker frosting if desired.
- In a small bowl, mix graham cracker crumbs with melted butter. Sprinkle over frosted cookies and top with a cherry.
- Serve immediately or store leftovers in the fridge for up to three days.
Notes
Use softened butter and cream cheese for easier mixing. Don’t overbake; cookies should be slightly soft in the center.
