- 1 cup salted butter, room temperature
- 1 1/2 cups brown sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1 teaspoon baking soda
- 2 cups graham cracker crumbs (about 12 crackers)
- 2 cups all-purpose flour
- 4 oz cream cheese, room temperature
- 1/2 cup salted butter, softened
- 2 1/2 cups powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1–2 tablespoons cornstarch
- 1/2 cup graham cracker crumbs (about 4 crackers)
- 1 tablespoon salted butter, melted
- 1 (21 oz) can cherry pie filling
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the room temperature butter and brown sugar together until light and fluffy. Add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients (salt, baking soda, graham cracker crumbs, and flour) until fully combined.
- Scoop out the dough onto baking sheets and bake for 10-11 minutes. Allow the cookies to cool on a wire rack.
- For the frosting, beat together the cream cheese and softened butter until creamy. Gradually add powdered sugar and vanilla, mixing well. Add cornstarch to thicken if needed.
- For the streusel, mix graham cracker crumbs with melted butter. Sprinkle over the frosted cookies, then add cherries on top.
- Serve within 2 hours for best flavor, or store leftovers in the refrigerator for up to 3 days.
