- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup cherry pie filling
- 4–6 large flour tortillas
- Oil for frying
- Powdered sugar (for dusting)
- Extra cherry pie filling (for topping)
Instructions
- In a mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract together until smooth and creamy. Gently fold in the cherry pie filling.
- Lay out the tortillas. Divide the cheesecake mixture evenly among them, placing the filling in the center. Fold the sides over the filling and roll up burrito-style.
- Heat oil to 350°F (175°C) in a fryer or skillet. Fry chimichangas in batches for 2-3 minutes per side until golden brown. Drain on paper towels.
- Dust with powdered sugar and top with extra cherry pie filling before serving warm.
Notes
For a healthier option, you can bake the chimichangas at 375°F (190°C) for about 15-20 minutes.
