  • 2 large eggs
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 8 oz cream cheese, room temperature
  • 1/4 cup sour cream or plain Greek yogurt
  • 1/3 cup granulated white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 (21 oz) can cherry pie filling
  • Optional: whipped cream and maraschino cherries for garnish

Instructions

  1. In a medium bowl, combine the melted butter and cocoa powder. Let the mixture sit for 5 minutes. Add the brown sugar and vanilla extract, mixing well. Add the eggs one at a time, mixing thoroughly. Stir in the salt and flour until fully combined. Grease a 9×9 inch baking pan or line it with parchment paper. Spread about 3/4 of the brownie batter in the pan.
  2. In a separate bowl, beat the cream cheese and sour cream (or yogurt) until creamy. Add the sugar, egg, and vanilla extract, mixing until smooth.
  3. Preheat the oven to 350°F (175°C). Pour the cheesecake mixture over the brownie batter. Drop spoonfuls of cherry pie filling over the cheesecake layer. Spoon the reserved brownie batter into the gaps. Use a toothpick to swirl the mixture lightly.
  4. Bake for 40-45 minutes until set. Let the brownies cool for 2-3 hours before slicing. For cleaner slices, refrigerate them.
  5. Optional: Top with whipped cream and maraschino cherries for an extra touch.

Ensure cream cheese is at room temperature for a smooth mixture. Check for doneness by inserting a toothpick into the brownies.
