- 2 medium zucchinis
- 1 teaspoon salt
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Grate the zucchinis and sprinkle them with salt. Let them sit for about 10 minutes to draw out moisture. Squeeze out any excess liquid.
- In a large bowl, combine the drained zucchini, eggs, mozzarella, and Parmesan. Mix until everything is well combined.
- Preheat a skillet over medium heat and add a bit of oil.
- Drop spoonfuls of the mixture into the skillet, flattening them slightly. Cook for about 3-4 minutes on each side or until golden brown.
- Remove the fritters from the skillet, drain them on paper towels, and serve them warm.
Notes
Make sure to squeeze out as much moisture from the zucchinis as possible to prevent sogginess. Consider adding herbs for extra flavor.
