Ingredients

  • 50g carrot
  • 1 zucchini
  • 1/2 small onion (50g)
  • 1 egg
  • 100ml milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 100g flour (2/3 cup)
  • Cheddar cheese to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Grease a baking dish.
  3. Grate the zucchini and carrot, and finely chop the onion.
  4. In a bowl, mix the grated zucchini, grated carrot, chopped onion, and the rest of the ingredients (egg, milk, salt, pepper, flour, and cheddar cheese) until well combined.
  5. Pour the batter into the greased baking dish.
  6. Bake for 30-35 minutes or until golden and set.
  7. Let cool slightly before serving. Enjoy!

Notes

Squeeze excess water from grated zucchini to avoid sogginess. Experiment with different cheeses and add herbs for varied flavors.
