- 50g carrot
- 1 zucchini
- 1/2 small onion (50g)
- 1 egg
- 100ml milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 100g flour (2/3 cup)
- Cheddar cheese to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Grease a baking dish.
- Grate the zucchini and carrot, and finely chop the onion.
- In a bowl, mix the grated zucchini, grated carrot, chopped onion, and the rest of the ingredients (egg, milk, salt, pepper, flour, and cheddar cheese) until well combined.
- Pour the batter into the greased baking dish.
- Bake for 30-35 minutes or until golden and set.
- Let cool slightly before serving. Enjoy!
Notes
Squeeze excess water from grated zucchini to avoid sogginess. Experiment with different cheeses and add herbs for varied flavors.
