- 4 eggs
- 1/4 cup shredded cheese (cheddar or your choice)
- 2 strips of bacon
- 1/2 avocado
- 1/4 cup cottage cheese
- 1 tsp tajin seasoning
- Handful of blueberries
- Water
Instructions
- Cook the bacon in a pan until crispy. Remove and drain on paper towels.
- In the same pan, scramble the eggs over medium heat. Add the cheese and mix until melted.
- Slice the avocado.
- Serve the cheesy scrambled eggs with bacon, cottage cheese, sliced avocado, and sprinkle with tajin.
- Add a handful of blueberries on the side.
- Enjoy with a glass of water.
Notes
For fluffier scrambled eggs, add a little water or milk when whisking the eggs. Store leftovers separately for best texture.
