Description

A delicious and quick breakfast option featuring fluffy scrambled eggs, crispy bacon, creamy avocado, and tangy cottage cheese.


Ingredients

Scale
  • 4 eggs
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 2 strips of bacon
  • 1/2 avocado
  • 1/4 cup cottage cheese
  • 1 tsp tajin seasoning
  • Handful of blueberries
  • Water

Instructions

  1. Cook the bacon in a pan until crispy. Remove and drain on paper towels.
  2. In the same pan, scramble the eggs over medium heat. Add the cheese and mix until melted.
  3. Slice the avocado.
  4. Serve the cheesy scrambled eggs with bacon, cottage cheese, sliced avocado, and sprinkle with tajin.
  5. Add a handful of blueberries on the side.
  6. Enjoy with a glass of water.

Notes

For fluffier scrambled eggs, add a little water or milk when whisking the eggs. Store leftovers separately for best texture.
