- 1 lb baby yellow potatoes, halved
- 12 oz smoked sausage, sliced
- 1 tbsp olive oil
- 1 cup shredded cheddar cheese
- 3/4 cup heavy cream
- 1 packet ranch seasoning mix (1 oz)
- Salt & pepper, to taste
- Fresh chives or green onions, chopped (for garnish)
- Crushed red pepper flakes (optional)
Instructions
- Boil halved baby potatoes in salted water until fork-tender (about 10–12 minutes). Drain and set aside.
- In a large skillet, heat olive oil over medium-high. Add sausage slices and cook until browned on both sides (about 5–6 minutes).
- Reduce heat to medium-low. Pour in heavy cream, ranch seasoning, and cheddar cheese. Stir until smooth and creamy.
- Add potatoes to the skillet and toss gently to coat with the cheesy ranch sauce.
- Sprinkle with chopped chives and red pepper flakes, if desired. Serve warm!
Notes
For even creamier sauce, add a little extra heavy cream or cheese. If you like some heat, consider adding more crushed red pepper flakes.
