Ingredients

  • 1 lb baby yellow potatoes, halved
  • 12 oz smoked sausage, sliced
  • 1 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 3/4 cup heavy cream
  • 1 packet ranch seasoning mix (1 oz)
  • Salt & pepper, to taste
  • Fresh chives or green onions, chopped (for garnish)
  • Crushed red pepper flakes (optional)

Instructions

  1. Boil halved baby potatoes in salted water until fork-tender (about 10–12 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high. Add sausage slices and cook until browned on both sides (about 5–6 minutes).
  3. Reduce heat to medium-low. Pour in heavy cream, ranch seasoning, and cheddar cheese. Stir until smooth and creamy.
  4. Add potatoes to the skillet and toss gently to coat with the cheesy ranch sauce.
  5. Sprinkle with chopped chives and red pepper flakes, if desired. Serve warm!

Notes

For even creamier sauce, add a little extra heavy cream or cheese. If you like some heat, consider adding more crushed red pepper flakes.
