Description

Delicious and filling burritos filled with seasoned ground beef, tender potatoes, and gooey cheddar cheese, perfect for any time of day.


Ingredients

  • 1 lb ground beef
  • 3 medium potatoes, peeled & diced
  • 1/2 cup onion, chopped
  • 1 packet taco seasoning
  • 3/4 cup water
  • 1 1/2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • Sour cream (for garnish)
  • Chopped cilantro (for garnish)

Instructions

  1. In a large skillet, brown the ground beef with the chopped onions. Once cooked, drain the fat.
  2. Add the diced potatoes, taco seasoning, and water to the pan. Cover it up and let it simmer for 15–20 minutes until the potatoes are tender, stirring occasionally.
  3. If there’s too much liquid, uncover and cook until it thickens.
  4. Warm the tortillas and divide the filling evenly among them. Sprinkle plenty of cheese on top!
  5. Roll them up into burritos and sear them in a hot skillet until they are golden and crisp.
  6. Serve each burrito with a dollop of sour cream and a sprinkle of chopped cilantro.

Notes

You can customize these burritos with different cheeses or add extra veggies such as bell peppers for added nutrition.
