Delicious and filling burritos filled with seasoned ground beef, tender potatoes, and gooey cheddar cheese, perfect for any time of day.
Ingredients

- 1 lb ground beef
- 3 medium potatoes, peeled & diced
- 1/2 cup onion, chopped
- 1 packet taco seasoning
- 3/4 cup water
- 1 1/2 cups shredded cheddar cheese
- 4 large flour tortillas
- Sour cream (for garnish)
- Chopped cilantro (for garnish)
Instructions
- In a large skillet, brown the ground beef with the chopped onions. Once cooked, drain the fat.
- Add the diced potatoes, taco seasoning, and water to the pan. Cover it up and let it simmer for 15–20 minutes until the potatoes are tender, stirring occasionally.
- If there’s too much liquid, uncover and cook until it thickens.
- Warm the tortillas and divide the filling evenly among them. Sprinkle plenty of cheese on top!
- Roll them up into burritos and sear them in a hot skillet until they are golden and crisp.
- Serve each burrito with a dollop of sour cream and a sprinkle of chopped cilantro.
Notes
You can customize these burritos with different cheeses or add extra veggies such as bell peppers for added nutrition.
