A delightful side dish that combines sweet corn with rich garlic butter and melted cheese, perfect for summer barbecues and picnics.
Ingredients

- 4 ears of corn, husked
- 3 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3/4 cup shredded mozzarella or Parmesan cheese
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking dish with foil or lightly grease it.
- In a small bowl, mix melted butter, minced garlic, salt, and pepper.
- Brush each ear of corn generously with the garlic butter mixture and place in the baking dish.
- Bake for 20–25 minutes, turning once halfway through.
- Remove from oven, sprinkle with shredded cheese, and return to bake for an additional 5 minutes until cheese is bubbly and melted.
- Top with freshly chopped parsley before serving.
Notes
For a spicy twist, add a pinch of red pepper flakes to the butter mixture. You can also experiment with different types of cheese.
