A warm and comforting dish that combines the flavors of enchiladas with heartiness of chili, packed with protein, beans, corn, and melty cheese.

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed

  1. In a large pot, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot, cooking until softened.
  3. Stir in the black beans, frozen corn, broth, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes.

Notes

For extra flavor, consider adding diced bell peppers or jalapeños. The chili can also be made spicy by adding more chili powder or hot sauce.
