Description

A comforting meal featuring jumbo pasta shells stuffed with chicken, broccoli, and cheese, all smothered in a rich sauce.


Ingredients

  • 20 jumbo pasta shells
  • 2 cups cooked shredded chicken
  • 1 1/2 cups steamed broccoli florets (chopped)
  • 1 cup ricotta or cream cheese (optional for extra creaminess)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups Alfredo or cheese sauce (store-bought or homemade)
  • Salt and pepper to taste
  • Chopped parsley (for garnish)

Instructions

  1. Boil pasta shells until al dente, then drain and set aside. Preheat oven to 375°F (190°C).
  2. In a bowl, combine chicken, broccoli, ricotta (if using), half the cheddar, salt, and pepper.
  3. Stuff each shell with the chicken mixture and place in a greased baking dish.
  4. Pour Alfredo or cheese sauce over shells, then top with mozzarella and remaining cheddar.
  5. Cover with foil and bake for 20 minutes. Uncover and bake another 10 minutes until cheese is golden and bubbly.
  6. Garnish with parsley and serve warm.

Notes

Great way to use up leftover chicken. Feel free to customize with extra vegetables.
