A comforting meal featuring jumbo pasta shells stuffed with chicken, broccoli, and cheese, all smothered in a rich sauce.

- 20 jumbo pasta shells
- 2 cups cooked shredded chicken
- 1 1/2 cups steamed broccoli florets (chopped)
- 1 cup ricotta or cream cheese (optional for extra creaminess)
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups Alfredo or cheese sauce (store-bought or homemade)
- Salt and pepper to taste
- Chopped parsley (for garnish)
Instructions
- Boil pasta shells until al dente, then drain and set aside. Preheat oven to 375°F (190°C).
- In a bowl, combine chicken, broccoli, ricotta (if using), half the cheddar, salt, and pepper.
- Stuff each shell with the chicken mixture and place in a greased baking dish.
- Pour Alfredo or cheese sauce over shells, then top with mozzarella and remaining cheddar.
- Cover with foil and bake for 20 minutes. Uncover and bake another 10 minutes until cheese is golden and bubbly.
- Garnish with parsley and serve warm.
Notes
Great way to use up leftover chicken. Feel free to customize with extra vegetables.
