Description

A comforting one-pot meal combining tender chicken, fluffy rice, and rich cheese, perfect for family dinners and leftovers.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long grain white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • Fresh thyme sprigs (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 baking dish.
  2. In a large bowl, whisk together chicken broth, milk, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir in the uncooked rice.
  3. Pour the rice mixture into the greased baking dish. Place chicken breasts on top and season with additional salt and pepper.
  4. Cover the dish tightly with foil and bake for 50–55 minutes until chicken is cooked through and rice is tender.
  5. Remove foil, sprinkle shredded cheddar cheese on top, and broil for an additional 5 minutes until cheese is bubbly and golden brown.
  6. Let the casserole rest for about 5 minutes before garnishing with fresh thyme and serving.

Notes

Great for leftovers. Pair with a green salad or vegetables. Can substitute cheeses or add vegetables for variation.
