- 4 boneless, skinless chicken breasts
- 1 cup uncooked long grain white rice
- 2 cups chicken broth
- 1 cup milk
- 1 can (10.5 oz) cream of chicken soup
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt & pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- Fresh thyme sprigs (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13 baking dish.
- In a large bowl, whisk together chicken broth, milk, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir in the uncooked rice.
- Pour the rice mixture into the greased baking dish. Place chicken breasts on top and season with additional salt and pepper.
- Cover the dish tightly with foil and bake for 50–55 minutes until chicken is cooked through and rice is tender.
- Remove foil, sprinkle shredded cheddar cheese on top, and broil for an additional 5 minutes until cheese is bubbly and golden brown.
- Let the casserole rest for about 5 minutes before garnishing with fresh thyme and serving.
Notes
Great for leftovers. Pair with a green salad or vegetables. Can substitute cheeses or add vegetables for variation.
