- 12 oz rotini pasta
- 1 lb chicken breast, cut into chunks
- 1 tbsp olive oil
- 1 tsp Cajun seasoning
- 1/2 tsp paprika
- Salt & pepper, to taste
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Boil the rotini until al dente. Drain and set aside.
- Season the chicken pieces with Cajun spices, paprika, salt, and pepper. Sear the chicken in the olive oil until golden and cooked through. Remove the chicken and set aside.
- In the same skillet, melt the butter and sauté the minced garlic until fragrant. Add the heavy cream, bring it to a simmer, then stir in the cheddar and Parmesan cheeses until melted and smooth.
- Toss the cooked pasta and seared chicken into the skillet with the sauce. Mix everything to coat well.
- Garnish with fresh parsley and enjoy warm!
Notes
Opt for al dente pasta for the best texture. You can customize the seasoning or add vegetables for extra nutrition.
