Ingredients

  • 12 oz rotini pasta
  • 1 lb chicken breast, cut into chunks
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • Salt & pepper, to taste
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil the rotini until al dente. Drain and set aside.
  2. Season the chicken pieces with Cajun spices, paprika, salt, and pepper. Sear the chicken in the olive oil until golden and cooked through. Remove the chicken and set aside.
  3. In the same skillet, melt the butter and sauté the minced garlic until fragrant. Add the heavy cream, bring it to a simmer, then stir in the cheddar and Parmesan cheeses until melted and smooth.
  4. Toss the cooked pasta and seared chicken into the skillet with the sauce. Mix everything to coat well.
  5. Garnish with fresh parsley and enjoy warm!
